Apelsininis Keksas su Jogurtu ir Spanguolėmis/ Orange-Cranberry Yogurt Loaf

Apelsininis keksas su jogurtu ir spanguolėmis gana Kalėdinis, tiek apelsinai tiek spanguolės man atrodo labai tinkantys šventiniam metui. Saldus, kvapnus keksas, su malonia spanguolių rūgštele tikrai patiks visiems, buvo vienas iš populiaresnių keksų šiais metais sprendžiant pagal tai kaip greitai buvo suvalgytas.
Smagių švenčių ir iki pasimatymo kitais metais. Linkiu, kad visiems jie būtų kuo geriausi.


Produktai:

Keksui:
1,5 stiklinės miltų
2 a.š. kepimo miltelių
0,5 a.š. druskos
1 stiklinė natūralaus jogurto
1 stiklinė cukraus
3 dideli kiaušiniai
2 a.š. tarkuotos apelsino žievelės
0,5 a.š. vanilės ekstrakto
0,5 stiklinės aliejaus
1,5 stiklinės spanguolių

Apelsininiam Sirupui:

0,3 stiklinės šviežiai spaustų apelsinų sulčių
0,3 stiklinės cukraus

Apelsininiam Glaistui:
1 stiklinė cukraus pudros, persijotos
2-3 v.š. apelsinų sulčių

Gaminimo procesas:

Įkaitinti orkaitę iki 180C. Ištepti riebalais, pabarstyti miltais 22x12 cm kepimo formą.

Persijoti miltus, kepimo miltelius ir druską. Dideliame dubenyje suplakti kartu jogurtą, cukrų, kiaušinius, apelsino žievelę, vanilę ir aliejų. Atsariai įmaišyti sausus produktus. Kitame dubenyje sumaišyti spanguoles ir 1 v.š. miltų, tuomet atsargiai jas įmaišyti į tešlą.

Tešlą supilti į paruoštą formą ir kepti apie 50-55 minutes arba kol patikrinus mediniu iešmeliu pyrago viduryje jis aplips tik keliais trupiniais. Leisti pyragui atvėsti 10 minučių prieš išimant ant metalinių grotelių.

Kol pyragas vėsta pagaminkite sirupą. Nedideliame puode sumaišyti apelsinų sultis ir cukrų, pavirti ant vidutinės ugnies kol cukrus ištirps. Tuomet virti sirupą toliau, apie 3 minutes. Nuimti nuo ugnies. Mediniu iešmeliu subadyti pyrago viršų ir šonus. Aptepti sirupu pyrago viršų ir šonus, leisi sirupui susigerti ir vėl aptepti sirupu. Leisti pilnai atvėsti.

Glaistui nedideliame dubenyje sumaišyti cukraus pudrą ir apelsinų sultis. Glaistas turėtų gautis tirštas, bet tinkamas pilti. Jei reikia įpilti dar šiek tiek apelsinų sulčių. Ant atvėsinto pyrago viršaus užpilti glaistą, leisti jam sustingti apie 15 minučių prieš patiekiant.

Orange yogurt and cranberry cake is just great for Christmas as oranges and cranberry seem very appropriate for the festive season. Sweet, flavorful orange scented cake with pleasant sour cranberries would be really like by everyone. It was one of the most popular cakes this year, judging by how quickly it has been eaten.

Products:

Fr the Cake:
1,5 cups flour
2 tsp baking powder
0,5 tsp salt
1 cup plain yogurt
1 cup sugar
3 large eggs
2 tsp grated orange zest
0,5 tsp vanilla extract
0,5 cup oil
1,5 cups fresh or defrosted cranberries

For the Orange syrup:

0,3 cup freshly squeezed orange juice
0,3 cup sugar

For the Orange Glaze:
1 cup icing sugar, sifted
2-3 tsp orange juice

Method:

Preheat the oven to 180C. Grease and sprinkle with flour 22x12 cm baking form.

Sift the flour, baking powder and salt. In a large mixing bowl beat together yogurt, sugar, eggs, orange zest, vanilla and oil. Mix in dry ingredients. In another bowl, combine cranberries and 1 tablespoon of flour, then mix them gently into the batter.

Pour the batter into the prepared form and bake for about 50-55 minutes or until a wooden skewer inserted comes out clean or with few crumbs. Allow to cool for 10 minutes before removing on the wire rack.

While the cake is cooling make syrup. In a small saucepan, mix the orange juice and sugar and simmer on medium heat until sugar is dissolved. Then boil syrup for about 3 minutes. Remove from the heat. Using wooden skewer pierce the top and sides of cake. Brush the top and sides of the cake with the syrup, allow the syrup to soak in and then brush again. Let it cool completely.

For the glaze in a small bowl, mix the icing sugar and orange juice. The glaze should be thick but dripping consistency. If required add some more orange juice. On top of the cooled cake pour the glaze, let it set for about 15 minutes before serving.
