Paneer Makhani/ Sviestinis panyras(Saldaus pieno sūris)/ Butter Paneer

Būna tokių dienų, kai viskas gaunasi ne taip kaip turėtų, kai naujienos tik blogos, nėra nuotaikos. Tokiom dienom tikriausiai geriau negaminti maisto, nes kaip tyčia ir produktai neklauso, nors viską darai kaip reikia rezultatas gaunasi netikęs. Bet kadangi pradėjau tai teko užbaigti gaminti pietus ir suvalgyti tą košę, kuri turėjo būti sviestinis panyras.. Ir geriau nekišiu nosies iš namų ir eisiu šiandien anksti miegoti, kad geresnis rytojus ateitų greičiau.

Apie 500 gr. panyro (saldaus pieno sūrio)
1 a.š. smulkinto česnako
1 a.š. imbiero pastos
200 gr. pomidorų pastos
1 svogūnas (trintas)
2 žalieji čili pipirai (smulkinti)
2 a.š. maltos kalendros
0,5 a.š. maltos ciberžolės
1 a.š. garam masala prieskonių
1 a.š. cukraus
1 a.š džiovintų vaistinės ožragės lapų
0,5-1 stiklinė grietinėlės
Druskos pagal skonį
Sviesto ir aliejaus kepimui

Gaminimo procesas:


Įkaitintame aliejuje iki auksiniai geltonos spalvos apkepti panyro gabaliukus. Išimti ir padėti ant popierinio rankšluoščio.

Puode ištirpinti apie 4 v.š. sviesto. Apkepti svieste svogūnų tyrę, smulkintą česnaką, imbiero pastą ir žaliuosius čili. Po maždaug 5 min. sudėti pomidorų tyrę, prieskonius (ciberžolę, kalendrą, raudonųjų čili miltelius, garam masalą) ir druską. Viską gerai išmaišyti ir kepinti apie 5-10 min., kol masė patirštės.

Sudėti panyrą, įpilti apie 0,5 stiklinės vandens, įdėti šaukštelį cukraus, ožragės džiovintus lapus ir atsargiai išmaišius palaukti kol užvirs, tada pavirti ant nedidelės ugnies apie 5 min.

Supilti grietinėlę, palaukti kol vėl užvirs. Pagal skonį įdėti dar druskos, jei per rūgštu cukraus ir atsargiai išmaišius, nuimti nuo ugnies.


There are days when things are not going well as expected, you get only bad news and you just have no mood. On such days it is probably better not to cook food, because even if you do things as usually the result is disappointing. But since I started cooking dinner I had to finish it. I think I ll just try to go to sleep early hoping for a better day tomorrow.

Cooking time: about an hour

Products:

500 grams. paneer (sweet milk cheese)
1 tsp crushed garlic
1 tsp ginger paste
200 gr. tomato paste
1 onion (grated)
2 green chilies (chopped)
2 tsp coriander powder
0.5 tsp turmeric powder
1 tsp garam masala
1 tsp. sugar
1 tbsp dried Fenugreek leaves
0.5 to 1 cup cream
Salt to taste
Butter or oil for frying

Method :

Heat the oil and fry paneer pieces or medium heat until golden color. Remove and place on a paper towel.

Melt 4 tablespoons of butter in a pan. Put the onions, minced garlic, ginger and green chili and fry it. After about 5 minutes add tomato puree, spices (turmeric, coriander, red chili powder, garam masala) and salt. Mix well and cook for 5-10 minutes. Until the mass thickens.

Add fried paneer pieces, add about 0.5 cups of water, a teaspoon of sugar, dried fenugreek leaves and gently mix it. Wait until it starts boiling, then simmer on low heat for about 5 minutes.

Pour in the cream, mix it in, wait until it starts boiling again. Adjust salt and add more sugar if it is too sour. Remove from heat and serve garnished with coriander.

  5. Magic of Spice, thanks it's better cause its another day already :) Curry was very good both taste and looks, just paneer was mushy and didn't stay in shape :( ( I can only guess that milk wasn't good)

    I was really disappointed that cheese turn out wrong this time, though I was doing it the same way as usually. But it still tasted good :)

  11. Medeja, one of my good friends is from Lithuania! We spent a weekend in Vilnius and some nearby areas last summer. Loved it! Glad to know that paneer makhani is being made on that part of the continent :-)
