Mandžiūrijos vištiena/ Chicken Manchurian

Mandžiūrijos vištiena yra indo- kiniškas patiekalas, kadangi jame susipina šių abiejų virtuvių gaminimo būdai ir produktai. Po pirmo karto kai pabandžiau pagaminti šią vištieną ji tapo vienu iš mėgstamiausiu patieklų mūsų namuose. Galiu įspėti, kad tai aštus vištienos patiekalas, bet tikrai vertas dėmesio.
Aš mėgstu šiek tiek padažo, todėl paprastai padažo darau dvigubą porciją, jo tikrai nebūna perdaug.



Produktai marinavimui:

0.5 kg vištienos file (pjaustytos nedideliais gabaliukais)
2 v.š. miltų
2 v.š. krakmolo
1 kiaušinis
0,5 a.š. laimo sulčių arba acto
Druskos pagal skonį

Padažui:

1 svogūnas (smulkiai pjaustytas)
1 v.š. česnako- imbiero pastos
1,5 v.š. sojos padažo
1 v.š. čili padažo
2 v.š. kečupo
1 a.š. cukraus
Maistinių dažų žiupsnelio (nenaudojau)
0,25 stiklinės vištienos sultinio
Aliejaus kepimui

Gaminimo būdas:

Dubenyje sumaišyti miltus, kiaušinį, krakmolą, laimo sultis/actą ir druską. Sudėti vištieną, gerai viską išmaišyti ir palikti pasimarinuoti bent 1 valandai.

Keptuvėje įkaitinti aliejų ir kepti marinuotą vištieną, kol bus minkšta ir iškepusi (bet ne perkepusi). Išimti vištieną ir padėti ant popierinio rankšluosčio.

Puode storu dugnu arba gilioje keptuvėje įkaitinti aliejų, sudėti svogūną ir apkepti kol bus permatomas. Sudėti česnako imbiero pastą ir pakepinti.

Sudėti sojų padažą, čili padažą, kečupą, maistinius dažus, cukrų ir sultinį.
Viską gerai išmaišyti ir užvirti. Sudėti keptus vištienos gabaliukus ir ant mažos ugnies virti kol padažas susigers į vištieną. Patikrinti ar netūksta druskos. Pavirti kelias minutes ir patiekti.



Manchurian chicken is the Indo-Chinese dish, as it is a mix of ingredients and methods of both cuisines. After I tried making this chicken dish for the first time at home ​​it become one of the favorites in our home. I can only say that it is bit spicy, but it definitely worth trying.
I like a little bit more sauce,so I usually make a double quantity of sauce.

Products for marinating:

0.5 kg chicken (cut into small pieces)
2 tbsp flour
2 tbsp cornstarch
1 egg
0.5 tbsp lime juice or vinegar ( I use about 1 tbsp)
Salt to taste

For the sauce:

1 onion (finely chopped)
1 tbsp garlic-ginger paste
1.5 tbsp soy sauce
1 tbsp chili sauce
2 tbsp ketchup
1 tsp sugar
Pinch of food color( I didn't used it)
0.25 cups of chicken stock
Oil for frying

Method:

In a bowl mix flour, egg, cornstarch, lime juice/ vinegar and salt. Add the chicken, mix well and leave everything for at least 1 hour.

Heat the oil in a frying pan and fry the marinated chicken until it's tender and cooked. (But not over fried). Remove chicken and set aside on a paper towel

In a thick-bottomed pan or deep skillet heat the oil, add onion and fry until it becomes translucent. Add ginger garlic paste and fry it until raw smell disappears.

Add soy sauce, chili sauce, ketchup, food color, sugar and stock.Mix it well and bring it to the boil. Add the fried chicken pieces and simmer on a low heat until sauce is absorbed into the chicken. To check the salt. Simmer for a few minutes and serve.

  1. This is something that my kids will enjoy! I've never heard of Manchurian chicken before but the ingredients are easy to get and I can't wait to try!

  2. O kaip gauti/pasidaryti česnako-imbiero pastą ? Imbiero turiu tik džiovinto milteliais :(

    1. Vietoj česnako pastos aš dedu maždaug - smulkintas česnako skilteles. O imbiero pastą galima nesunkiai pakeisti takruota imbiero šaknimi. Šviežios šaknies maždaug cm gabaliuką smulkiai sutarkuoti.

  4. I like the double method of cooking. Frying in a pan to crisp and then cooking again in the sauce must give the chicken a great texture as well as taste. I would have to make extra sauce too. I have never heard of Manchurian chicken but it is something I would like to try. Thanks for sharing this tasty recipe. Hope you are enjoying the weekend.

    1. I think this chicken is in most indian restaurant, I tried it first there, then forgot about it and accidentally saw the recipe. It is one of the best and also quickest chicken recipes.
