Nežinau kodėl man patinka keksai, niekad nebandžiau apie tai galvoti. Gal todėl, kad juos paprasta pagaminti ir jie tokie saknūs. Kai pamačiau šio apelsininio rikotos kekso receptą tai tikriausiai buvo meilė iš pirmo žvilgsnio, tam reikalui net rikotos nusipirkau, nes šiaip labai retai jos perku. Apelsininis keksas su rikota tikrai yra Keksas iš didžiosios raidės Nr.1. Jis nepaprastai minkštas, švelnaus apelsinų skonio ir aromato, tiesiog tirpstantis burnoje..

Orkaitę įkaitinti iki 170-180 C. Ištepti riebalais arba iškloti kepimo popieriumi 12x22cm kepimo formą.
Sudėti sviestą, rikotą ir 1,5 stiklinės cukraus į didelį dubenį ir elektriniu plaktuvu plakti apie 3 minutes arba kol masė bus šviesi ir pūri.
Po vieną nuolat plakant įmušti kiaušinius. Sudėti vanilę, apelsino žievelę ir amaretą ir plakti iki vientisos masės.
Sudėti sausus produktus dalimis, maišant tik tol kol susimaišys. Tešlą supilti į paruoštą formą ir kepti kol patikrinus mediniu iešmeliu jis nebebus aplipęs tešla, apie 45- 50 minučių. Prieš išimant iš kepimo formos apie 10 minučių leisti čių. Išėmus iš orkaitės palikti 10 minučių tada išimti iš kepimo formos ir atvėsinti ant grotelių.

Kol keksas vėsta, nedideliame puode ant vidutinės ugnies sudėti apelsinų sultis ir cukrų. Palaukti kol cukrus ištirps, tada pavirti dar 3 minutes.
Kol keksas vis dar šiltas mediniu iešmeliu subadyti jo šonus ir viršų. Ištepti kekso viršų ir šonus sirupu ir palaukti kol susigers ir dar kartą aplieti sirupu. Leisti keksui pilnai atvėsti ir skanauti.

0.5 tsp salt
180 gr. butter (room temperature)

Preheat the oven to 170-180 C. Grease or line with baking baking paper 12x22cm baking form.
Add together in a big bowl butte, ricotta and 1.5 cups of sugar. Beat with electric mixer for about 3 minutes or until the mixture is light and fluffy.
One by one beat in the eggs, beating continuously. Add vanilla, orange zest and Amaretto and beat until well mixed.
Add the dry ingredients gradually, mixing just until incorporated. Pour the batter into the prepared baking pan and bake until a wooden skewer inserted comes out clean, about 45-50 minutes. Leave to cool in a baking for 10 minutes, then remove to cool completely or a wire rack.
While pound cake is cooling, in a small pan on medium heat add the orange juice and sugar. Wait until the sugar has dissolved, then simmer for another 3 minutes.
While cake is still warm poke holes with wooden skewer on it’s sides and top. Brush the sides and the top with the syrup and wait until it’s absorbed, then again brush it. Allow to cool completely and enjoy.
