2 tbsp melted butter (or ghee) + for greasing the dish
0.5 tsp ground cardamom
3 tbsp chopped pistachio nuts (did not have it so used almonds)
Method:
Man šventės baigiasi, kai Kalėdinė eglutė nurengiama, sudedama į jos ‚sarkofagą‘ ir uždaroma spintoje iki kitų Kalėdų. Nežinau kodėl, bet visada ta nupuošimo ceremonija kažkokia liūdna, čia jau ir šokoladas nelabai padeda, reiktų kažko tikriausiai stipresnio.
Dar vienas indiškas desertas,kuris su Kalėdine eglute niekuo nesusijęs. Indiškų saldumynų ‚eksperto‘ nuomone šis pieniškas kalakand buvo labai skanus, visai toks kaip gaminamas Indijoje. Na belieka patikėti, o geras įvertinimas paprastai reiškia, kad man deserto bus palikta nedaug.

Gaminimo procesas:
Tirštintą pieną ir rikotą sudėti į storasienį puodą ir maišant užvirti, sumažinti ugnį. Virti ant nedidelės ugnies apie 20 minučių, dažnai pamaišant, kol masė pastebimai patirštės.
Sudėti pieno miltelius, cukrų, išmaišyti ir toliau virti, kol masė labai sutirštės (apie 20 – 30 minučių). Nors aš viriau apie 45 minutes, rezultate desertas buvo gana minkštas, todėl, jei norite labiau į saldainių masę panašas ir pjaustomo deserto reikėtų pavirti ilgiau.
Įmaišyti sviestą ir pavirti dar 3-4 minutes. Į riebalais išteptą indą supilti gautą masę, ant viršaus pabarstyti kardamonu ir pistacijomis. Leisti atvėsti, tada palikti saldytuve sukietėti, kad būtų galima supjaustyti.
For me holidays are over when the Christmas tree is undressed, then naked placed in ‘sarcophagus' and hidden in the closet until next Christmas. I do not know why, but that ceremony is always sad and even chocolate does not help, maybe something stronger would.
Here is another Indian dessert, that actually has nothing in common with Christmas Tree. In my ‘expert’s' for Indian sweets, opinion, this milk fudge- kalakand was very tasty, just the way you can get them in India. Well I just have to believe and usually a good rating means that I will get only very little bit of it.
Makes: 15 servings
Products:
1 can evaporated milk
1.5 cups ricotta cheese
0.75 cup milk powder
0.75 cup sugar
2 tbsp melted butter (or ghee) + for greasing the dish
0.5 tsp ground cardamom
3 tbsp chopped pistachio nuts (did not have it so used almonds)
Method:
Place evaporated milk and ricotta in a thick-bottomed pan and mixing bring to a boil then, reduce the heat. Cook on low heat for about 20 minutes, mixing often, until the mixture becomes fudgy and thickens visibly.
Add the milk powder, sugar, mix and continue cooking until the mixture is very thick (about 20-30 minutes). I simmered for about 45 minutes, but the dessert was still bit soft, so if you want more fudge like kalakand simmer longer.
Mix in butter and simmer for another 3-4 minutes. Pour the mixture into greased dish, sprinkle cardamom and pistachios on top. Allow it to cool, then leave the fridge to harden, so you would be able to cut it before serving.

PanaikintiI know exactly what you mean! We're taking down our Christmas tree tomorrow, and it's always a sad affair for me. I'll miss all the beautiful lights outside as well. I've never heard of this dessert, but it sounds really good!
