I remember when I got a half of the fresh coconut for the first time I was like a monkey with it, I tried to pick it out, then to chop with a knife. That's what happens when you get something what you never had in your life, you just don't know what to do with it. It is much easier for me just to have a bag of dessicated coconut for baking.
If my husband wasn't such a big fan of coconut cakes I probably wouldn't make them so often. Because myself I don't feel that much love for coconut. It is not surprising that this sweet coconut cake with glace cherries and thin chocolate base disappeared pretty quickly.

Products:
180 gr. dark chocolate
3 eggs, room temperature, whisked
2 cups desiccated coconut
1 cup caster sugar
100 gr. glace cherries, finely chopped
Icing sugar for dusting
Method:
Prisimenu, kai pirmą kartą gavau pusę šviežio kokoso riešuto tai lyg kokia beždžionėlė jį krapščiau ir vienaip ir kitaip, bandžiau laužyti ir peilui kapoti. Kai neįpratus prie tokių gėrybių tai gavus neaišku kaip su jomis elgtis. Gaminimui vis dėl to paprasčiau nuolat turėti spintelėje maišiuką kokoso drožlių.
Jei ne mano vyras taip labai nemėgtų kokoso tikriausiai tiek daug pyragų su kokosu nekepčiau. Nes aš pati tokios didelės meilės kokosui nejaučiu. Taigi kokosinis pyragas su cukruotomis vyšniomis ir plonu šokoladiniu padu buvo skanėstas, kuris gana greitai tirpo ir buvo išgirtas.

Gaminimo procesas:
Orkaitę įkaitinti iki 180C, 30x20 cm formą iškloti kepimo popieriumi.
Šokoladą ištirpinti mikrobangų krosnelėje arba dubenyje virš puodo su verdančiu vandeniu. Ištirpintą šokoladą tolygiai paskleisti ant kepimo formos dugno ir 10 minučių pašaldyti.
Sumaišyti kiaušinius, kokoso drožles ir cukrų, įmaišyti vyšnias. Gautą masę supilti ant šokolado kepimo formoje, išlyginti paviršių ir kepti apie 20-25 minutes kol viršus bus auksinis. Pilnai atvėsinti kepimo formoje, prieš supjaustant pabarstyti cukraus pudra.

Method:
Preheat the oven to 180C, line 30x20 cm baking form with baking paper.
Melt the chocolate in the microwave or in a bowl placed over a pan with simmering water. Spread evenly melted chocolate on the bottom of the prepared baking and chill for 10 minutes.
Mix together eggs, coconut and sugar, then mix in cherries. Pour the mixture over the chocolate base and level the surface; bake for 20-25 minutes until the top is golden. Cool completely in the baking form; before slicing dust with icing sugar.
The flavors go so well together Medeja! Cherries are in season right now, and fresh would go great in this cake.
AtsakytiPanaikintiI was actually wondering how it would taste with fresh cherries, would be a really fresh twist :) But would be difficult to fins fresh cherries for me, their season is very short here. If you try with fresh ones, please let me know :)
