Citrininis Pyragas/ Lemon cake

Minkštas kvapnus citrininis pyragas.. Gerai, kad buvo puikus oras ir mažai buvome namie, kitaip tikriausiai būčiau pati suvalgiusi visą pyragą pati. Kadangi vietoj citrininio kremo naudojau turėtą citrininį džemą, jis nusėdo į dugną, skoniui tas nepakenkė, bet gal atrodė ne taip gražiai kaip galėtų. 


Porcijos : 10-12

Produktai:

3 citrinų sultys + 1 citrinos žievelė
220 gr sviesto, kambario temperatūros
2 stiklinės + 2 v.š. cukraus
4 kiaušiniai
1 stiklinė rūgpienio
3 stiklinės miltų
1 a.š. kepimo miltelių
0,5 a.š. kepimo sodos
0,5 a.š. druskos
0,75 stiklinės citrininio kremo (pirkto arba gaminto namie)
1,25 stiklinės cukraus pudros


Gaminimo procesas:

Orkaitę įkaitinti iki 180C, 12 stiklinių talpos kekso formą ištepti riebalais.

Elektriniu plaktuvu išplakti sviestą kol jis taps šviesiu. Sudėti 2 stiklines cukraus ir plakti iki šviesios purios masės. Sudėti citrinos žievelę ir 0,25 stiklinės citrinos sulčių ir išplakti iki vientisos masės. Po vieną nuolat plakant įmušti kiaušinius. Dalimis dėti miltus, kepimo miltelius, druską, kepimo sodą ir pilti rūgpienį kol viskas gerai susimaišys.

Pusę tešlos supilti į paruoštą formą, per vidurį peiliu padaryti griovelį. Šaukštu atsargiai į griovelį paskleisti citrinų kremą, stengiantis kad jie būtų toliau nuo kraštų. Tuomet atsargiai ant viršaus paskleisti likusią tešlą.

Kepti apie 45-50 minutes arba kol patikrinus mediniu krapštuku jis nebeaplips tešla. Kol pyragas kepa, smaišyti 2 v.š. citrinos sulčių ir 2 v.š. cukraus. Iškepusį pyragą palikti formoje 10 minučių, tuomet išimti ant lėkštės. Pyrago viršų sbadyti mediniu krapštuku ir paskleisti ant viršaus cukraus ir citrinų sulčių mišiniu. Leisti pyragui pilnai atvėsti.

Cukraus pudrą sumaišyti su 2 v.š. citrinos sulčių kol gausis vientisa masė. Paskleisti glaistą ant pilnai atvėsinto pyrago.


Soft heavenly smelling lemon cake .. If the weather wasn't that great and we wouldn't have been outside a lot I probably would have finished this cake just by myself.  
I used lemon jam instead of lemon curd, so it sank to the bottom, it didn't change the taste, but probably would have looked nicer with lemon curd. 


Servings: 10-12

Products:

Juice of 3 lemons + zest of 1 lemon
220 g butter, at room temperature
2 cups + 2 tbsp sugar
4 eggs
1 cup buttermilk
3 cups flour
1 tsp baking powder
0.5 tsp baking soda
0.5 tsp salt
0.75 cups lemon curd (purchased or home made)
1.25 cups icing sugar

Method:

Preheat the oven to 180C, grease 12-cup baking form.

Using an electric mixer beat butter until light. Add 2 cups of sugar and beat until light and fluffy. Add lemon zest and 0.25 cup of lemon juice and beat well. One by one beating continuously beat in the eggs. Gradually add the flour, baking powder, salt, baking soda alternating with buttermilk until everything is well incorporated.

Pour half of the dough into the prepared form, make the through going round then spoon the lemon curd into the trough, try to keep it away from the sides of the form. Then carefully spread the remaining dough on top.

Bake for 45-50 minutes or until a wooden skewer inserted comes out clean. While the cake is baking, mix 2 tablespoons of lemon juice and 2 tablespoons of sugar. When the cake is done, leave it in a form for 10 minutes, then remove on a plate. Poke the cake with a wooden skewer then brush the top with sugar and lemon juice mixture. Allow the cake to cool completely.

Mix icing sugar with 2 tablespoons of lemon juice until smooth glaze. Spread glaze on the completely cooled cake.
