Šokoladiniai Keksiukai su Avietiniu Kremu/ Chocolate Cupcakes with Raspberry Buttercream

Keksiukai:

85 gramai šokolado, smulkinto
28 gr. kakavos miltelių
175 ml karštos kavos
117 gr miltų
149 gr cukraus
0,5 a.š. druskos
0,5 a.š. kepimo sodos
6 v.š. aliejaus
2 kiaušiniai
2 a.š. baltojo acto
1 a.š. vanilės ekstrakto

Avietiniam kremui:

1,25 stiklinės šadytų arba šviežių aviečių
2 v.š. citrinos sulčių
225 gr. sviesto, kambario temperatūros
0,5 a.š. druskos
3,5 stiklinės cukraus pudros
1 v.š. grietinėlės

Gaminimo procesas:

Orkaitę įkaitinti iki 180C. Iškloti keksiukų formą popierėliais.
Sudėti šokoladą ir kakavą į dubenį, užpilti karštą kavą ir maišyti iki vientisos masės. Masę palikti atvėsti šaldytuve 20 minučių.

Sumaišyti miltus, cukrų, druską ir kepimo sodą. Kitame dubenyje sumaišyti aliejų, kiaušinius, actą ir vanilės ekstraktą. Įmaišyti šokoladinę masę. Sudėti miltų mišinį ir imaišyti iki vientisos masės.

Tešlą tolygiai padalinti į keksiukų formeles. Kepti apie 17-19 minučių. Išėmus iš orkaitės keksiukus palikti 10 minučių formoje, tuomet išimti ir pabaigti vėsinti ant metalinių grotelių.

Kremui skirtas avietes sudėti į nedidelį puodą kartu su citrinos sultimis ir pavirti ant vidutinės ugnies. Kai viskas užvirs kartas nuo karto pamaišyti mediniu šaukštu patrinant uogas kol jos taps minštos ir lengvai susitrins. Masė turėtų atrodyti kaip aviečių uogienė. Kai masė padengs šaukštą nuimti nuo ugnies, turėtų gautis apie 0,25 stiklinės. Leisti masei pilnai atvėsti.

Kremui į didelį dubenį sudėti sviestą, išplakti elektriniu plaktuvu iki purios masės (apie 2 minutes). Sudėti aviečių tyrę ir plakti iki vientisos masės. Po vieną stiklinę nuolat plakant sudėti cukraus pudrą. Galiausiai sudėti grietinėlę ir druską, viską gerai išplakti (apie 2 minutes) kol kremas bus vientisas ir purus. Papuošti kremu keksiukus.



For the cupcakes:

85 gr chocolate, chopped
28 gr cocoa powder
175 ml hot coffee
117 gr flour
149 gr sugar
0.5 tsp salt
0.5 tsp baking soda
6 tbsp oil
2 eggs
2 tsp white vinegar
1 tsp vanilla extract

For the raspberry buttercream:

1.25 cups frozen or fresh raspberries
2 tbsp lemon juice
225 gr butter, room temperature
0.5 tsp salt
3.5 cups powdered sugar
1 tbsp heavy cream

Method:

Preheat the oven to 180C. Line baking tray with cupcake liners.
Place chocolate and cacao into a bowl, pour hot coffee over it and mix until it is smooth. Leave the mixture to cool in the refrigerator for 20 minutes.

Mix flour, sugar, salt and baking soda. In the other bowl mix together oil, eggs, vinegar and vanilla extract. Mix in the chocolate mixture. Add the flour and mix everything until smooth.

Divide the batter evenly between cupcake liners. Bake for about 17-19 minutes. After taking out of the oven leave it for 10 minutes, then finish cooling on a wire rack.

For the buttercream: Add raspberries to the small pot together with lemon juice and simmer on the medium heat. When everything comes to a boil stir it occasionally, crush it with a wooden spoon until the mixture resembles raspberry jam and covers the back of the spoon. Remove from the stove, you should get about 0.25 cup of mixture. Allow the mixture to cool completely.

Add the butter in a large bowl, beat it with an electric mixer until it is fluffy (about 2 minutes). Add the raspberry puree and beat until incorporated. One glass at the time add the powdered sugar while beating. Finally, add cream and salt, and beat until fluffy and well incorporated(about 2 minutes). Frost the cooled cupcakes with the raspberry buttercream.
