Ananasinis Pyragas/ Pineapple Poke Cake

Pagal/ Source AverieCooks

Produktai:

0,5 stiklinės (110 gr) sviesto, tirpinto
2 dideli kiaušiniai
0,75 stiklinės cukraus
1 a.š. vanilės ekstrakto
1 stiklinė miltų
0,5 a.š. druskos
0,25 a.š. kepimo sodos
~550 gr konservuotų ananasų skardinė (labai gerai nusunkti ananasus, pasiliekant sirupą)
2 stiklinės cukraus pudros
3-4 v.š. ananasų sirupo

Gaminimo procesas:

Yesterday night I returned after a weekend in the tropics. Excellent weather, golden beaches, green forests and great food. How nice it would be at least once a year to have a holiday there. At least for some time I will be able to live in the memories. And on the same occasion I can treat myself with pineapple poke cake. If you want to taste  a little bit of tropics try making this pineapple cake.

Products:

0,5 cup (110 gr) butter, melted
2 large eggs
0,75 cup sugar
1 tsp vanilla extract
1 cup flour
0,5 tsp salt
0,25 tsp baking soda
~ 550 gr can of pineapple (very well drained, syrup reserved)
2 cups powdered sugar
3-4 tbsp pineapple syrup

Method:

Preheat the oven to 180C. Line 20x20 cm baking form with baking paper.

Into the slightly cooled butter add the eggs, sugar, vanilla and beat until smooth. Add the flour, salt, baking soda, mix until it's incorporated, but do not overmix. Mix in well crushed drained pineapple.

Pour the batter into the prepared form, level the top. Bake for about 35-45 minutes or until the wooden skewer inserted comes out clean or with a few crumbs. Leave the cake to cool until the glaze is being prepared.

In a large bowl, add 2 cups of powdered sugar and 3-4 tablespoons of pineapple syrup and mix well until smooth.
Using a small knife poke the top of the cake (make about 25 holes), slightly twisting the knife. Pour the glaze evenly on top of the cake, slightly smoothing it out making sure glaze goes into the holes.
Leave the cake for the glaze to soak in (best left overnight).
