Cashew Burfi/ Anakardžių Riešutų Burfi

Rytoj Diwali, todėl šiandien pagaminau anakardžių saldumyną, kuris tradiciškai gaminamas ta proga. Nors tiesą sakant mes labiausiai mėgstame tokias šventes dėl saldumynų, kuriuos gaminu ta proga :) Todėl, sveikinu su Diwali ir pasidalinkite kokiu nors skanėstu su savo artimaisiais.


Produktai:

250 gr. anakardžių riešutų
200 gr. cukraus pudros
1 stiklinė pieno
4-5 v.š. sviesto
0,5-1 a.š. malto kardamono


Gaminimo procesas:

Riešutus pamerkti piene maždaug valandai. Išmirkytus riešutus perkošti. Anakardžius susmulkinti iki vientisos masės.

Puode storu dugnu ištirpinti sviestą, sudėti riešutų masę ir maišant pakepinti ant vidutinės ugnies maždaug 6-8 min.

Sudėti cukraus pudrą, kardamoną, gerai išmaišyti. Nuolat maišyti kol cukrus ištirps ir masė pradės tirštėti. Kai masė pradės atiskirti nuo kraštų išjungti ugnį. Gautą masę supilti į kepimo popieriumi tiestą formą, išlyginti paviršių ir leisti atvėsti. Atvėsusią supjaustyti rombo formos gabaliukais.


Tomorrow is Diwali, so today I made cashew burfi, which is traditionally made for this occasion. Though to be honest, main reason is that we like the sweets that I make :) Anyway, I wish you all happy Diwali! And share some sweet treat with your loved ones.

Products:

250 gr. cashew nuts
200 gr. icing sugar
1 cup milk
4-5 tbsp butter
0.5 to 1 tsp cardamom powder


Method:

Soak cashews in milk for about one hour. Strain the soaked nuts and grind them into a smooth paste.

In a heavy-bottomed pan melt the butter, add cashew paste, fry the paste stirring on medium heat for about 6-8 min.

Add the icing sugar, cardamom, mix well. Mix continuously until the sugar has dissolved and the mixture thickens. When the mixture starts rolling from the sides turn the heat off. Pour the mixture to the form lined with baking paper and flatten the surface. Let it cool completely and into diamond shaped pieces.

  16. I've never tried burfi but they sound delicious especially with cashews (my fave). Perhaps this is the perfect time of year to have a go, hope you had a happy diwali!!
