Indiška kario pasta/ Indian curry paste

Šiandien pasidalinsiu paprastu receptu kaip pasigaminti namie kario pastą, nors jos kurį laiką negaminau pati Aš paprastai indiškus patiekalus gaminu iš pagrindų ir nebent palengvinimui naudoju pomidorų pastą vietoje pomidorų. Kario pasta yra labai patogus dalykais, kai norisi greičiau kažką pasigaminti. Tam reikalui aš turiu pirktos pastos indelį, kadangi pirkta kario pastą ilgiau galima laikyti, įtariu, kad maniškę netgi gali tekt ir išmesti, nes taip ir nepabaigsiu.



Išeiga: 1,5 stiklinės kario pastos

Produktai:

1 stiklinė svogūno
1 v.š. imbiero pastos (tarkuoto imbiero)
3,-4 česnako skiltelės
2-3 žalieji čili pipirai
1 lauro lapas
1 a.š. gvazdikėlių
1 a.š. pipirų
2 juodieni kardamonai
0,4 cinamono lazdelės
1 a.š. kumino sėklų
1 v.š. maltos kalendros
1 a.š. ciberžolės
2 v.š. aliejaus
Druskos pagal skonį
1 pomidoras (susmulkinto)

Gaminimo procesas:

Kartu iki vientisos masės susmulkinti virtuviniame kombaine svogūną, česnaką ir čili pipirus.

Sutrinti visus prieskonius išskyrus ciberžolę su kavamale.

Įkaitinti aliejų ir sudėti svogūnų masę. Ant vidutinės ugnies kaitinti kol masė sutirštės, tada sudėti ciberžolę ir druską.

Kepinti kol masė pradės keisti spalvą ir taps auksiniai ruda.

Sudėti pomidorą, pomidoras pirmiausia išsileis, kepinti reikia kol skystis išgaruos.

Sudėti prieskonių mišinį. Viską gerai išmaišyti. Dar pakepinti turputį ir kario pasta paruošta.

Recepte buvo nurodyta, kad pastą galima laikyti kelias savaites šaldytuve. Tereikia, kai atvės sudėti į sandarų indelį.




Today I would like to share a simple recipe how to make curry paste at home. Although I usually make Indian dishes from scratch and don't use a paste I let myself sometimes to use tomato paste instead of tomatoes to make things bit easier. Curry paste is a very handy thing when you want to make something quickly. For this purpose I have bought curry paste, just cause I can keep it in a fridge for a longer time, though I suspect that I will have throw it out anyway, because I won't be able to finish it.

Makes: 1.5 cups curry paste

Products:

1 cup onion
1 tablespoon ginger paste (grated ginger)
3 -4 cloves of garlic
2-3 green chilies
1 bay leaf
1 tsp cloves
1 tsp peppercorns
2 black cardamoms
0.4 cinnamon stick
1 tsp cumin seeds
1 tbsp spoon ground coriander
1 tsp turmeric
2 tbsp oil
Salt to taste
1 tomato (diced)

Method:

Add together onion, garlic and chili pepper. Grind everything in a food processor until the smooth paste.

Grind all the spices except turmeric with Coffee grinder. Set the spice mixture aside.

Heat oil and add onion mixture. Fry on medium heat until the mixture thickens, then add turmeric powder and salt.

Fry until the mixture starts to change color and becomes golden brown.

Add the tomatoes, tomato išsileis first, to be baked until the liquid has evaporated.

Add the spice mixture. Mix everything well. Fry everything little bit more and the curry paste is ready.

In the original recipe it was noted that the cooled paste can be kept in a airtight container in a fridge for a few weeks.

  1. I am sure that homemade curry paste is much more healthier and tastier than the store bought. Also, it does make great use of all those wonderful spices I have in the cabinet.   2. Skamba tikrai puikiai. Aš visokias pastas tai gaminu po vieną porciją iš kažkurios J.O. knygos ir niekad nenusiviliu rezultatu :)
    O dar manau išeitis gaminti po to iškart didelį kario troškinį ir dalį jo po to užšaldyti ;)

    1. Aš paprastai stengiuos gamint iš pagrindų ir suvalgyt viską per tumpą laiką :) Bet namie gamintos pastos geras pagalbininkas, ypač po darbo, kai noris kuo greičiau kažko pasigamint..

  4. Being an Indian, I can tell you that curry paste tastes amazing! It really is a handy thing to have for days when you don't have the time or energy to cook from scratch :) Plus, you can use it garnish any dish or transform leftovers. Great post, Medeja!
