Keptuvėje kepta Naan Duona/ Pan Fried Naan Bread

Nors keptuvėje kepta naan duona nėra tokia skani kaip tandoor'e kepta, bet daug skanesnė nei pirkta parduotuvėje ir pašildyta. Be to nėra sunku ją pasigaminti, ilgiausiai užtrunka tešlos kildinimas, todėl darau ją tik savaitgaliais.

Originaliame recepte buvo įdaryta naan duona, tačiau pietums prie kitų patiekalų man labiausiai patinka paprasta be jokių įdarų.

Produktai:

3.5 stiklinės miltų
1 stiklinė natūralaus jogurto
4 v.š. ghee/tirpinto sviesto/ aliejaus
1 a.š. druskos
1/8 a.š. kepimo sodos
2,5 a.š. sausų mielių
0.5 stiklinės šilto vandens
1.5 a.š. cukraus

Gaminimo procesas:

Į 0.5 stiklinės šilto vandens įdėkite cukrų ir mieles. Uždenkite ir palikite apie 10 minučių kol mielės aktyvuosis ir viršuje susiformuos puta.

Dubenyje sumaišykite miltus, kepimo sodą, druską, ghee, jogurtą ir aktyvuotas mieles.
Pradėkite minkyti, jei trūksta įpilkite šiek tiek vandens. Tešla turi būti elastinga, bet nelipti prie rankų.
Minkykite dar apie 5 minutes. Paimkite aliejumi išteptą didelį dubenį ir į jį įdėkite išminkytą tešlą.Uždenkite maistine plėvele ir palikite šiltoje vietoje kol pakils dvigubai tai gali užtrukti iki 3 valandų.

Pakilusią tešlą išimkite ir paminkyti kelias minutes. Tada padalinkite į 7 lygias dalis, padėkite ant lėkštės ir uždenkite nauja maistine plėvele. Palikite taip maždaug 40 minučių.

Paimkite vieną tešlos gabaliuką, kitus palikite uždegntus, kad jie neapdžiūtų.
Tešlą iškočiokite, gautas paplotys neturėtų būti perplonas.

Vieną pusę šiek tiek sušlapinkite (patepkite nedideliu kiekiu vandens ).
Keptuvę įkaitinti ir palikti ant pastovios vidutinės temperatūros. Duoną šlapia puse padėkite ant įkaitintos keptuvės ir uždenkite dangtį.

Kai ant viršutinės pusės pradeda atsirasti šiek tiek pūslių ir ji išsipučia, patepkite ją aliejumi ir apverskite.

Paprasta vienos puses kepimas trunka apie 2 minutes, jei darote kuo nors įdarytą duoną tuomet ji keps ilgiau (apie 4 minutes kiekvienai pusei).

Iškepusią naan duoną uždengti kol iškepsite duoną iš visos likusios tešlos. Patiekti karštą, patepus sviestu.



Though pan fried naan bread is not as tasty as the one made in tandoor, but much better than store bought ready made and heated. Besides, it is not difficult to make, most of the time takes that waiting for the dough to rise. So I make it only on weekends.

The original recipe was for stuffed naan, but as the side dish I prefer making plain naan without any filling.

Makes: 7

Products:

3.5 cups flour
1 cup natural yogurt
4 tbsp ghee / melted butter / oil
1 tsp salt
1/8 tsp baking soda
2.5 tsp dry yeast
0.5 cup warm water
1.5 tsp sugar

Method:

Take 0.5 cup of warm water and add sugar and yeast. Cover the glass and leave for about 10 minutes until the yeast activates and the foam forms on the top.

In a bowl mix together flour, baking soda, salt, ghee, yogurt and activated yeast.
Start kneading, if necessary, add a little bit of water water. The dough should be elastic, but not sticking to your hands.
Knead for about 5 minutes. Take a large bowl oiled a little bit and place the dough in it. Cover with a cling wrap and leave in a warm place to rise until it doubles in size, it can take up to 3 hours.

Take the dough and knead it for a few minutes. Then divide into 7 equal pieces, place on a plate and cover with a new cling wrap. Leave for about 40 minutes.

Take one piece, leave the rest covered, to prevent from drying.
Roll out the dough, bread should not be too thin.

Brush with a little bit of water one side of the bread.
Heat the frying pan and leave it on a medium heat. Place the bread wet side down and cover the pan.

Once the bubbles start appearing on the upper side and it’s puffed, brush it with a little bit of oil and flip the bread.

Plain naan usually takes about 2 minutes for each side, if you're doing something stuffed bread, then it will take longer (about 4 minutes each side).

When the naan bread is ready leave it covered until you finish making all of them. Serve hot, rubbed with butter.

  2. Vis seilę pavarvinu žiūrėdama į tokias duoneles, bet rankos nekyla pačiai išsikept:) Reikės kada prisiruošt, nes atrodo beprotiškai skaniai..

  4. Aš irgi iš tų, kurios archyviniam sąraše Naan duonyte laiko, o ragauja indiškam restorane :D Bet kada nors visgi ateis tas laikas ir nuosavoje viruvėje :)

  7. Your naan look great! Like you, I made breads only during weekend. I need to work on weekdays and can't afford the time to wait for the bread to proving :p

  13. I almost made naan a couple years ago when I hosted an Indian themed book club meeting...but I ran out of time. I will have to try your recipe...I bet it's a whole lot better than what I purchased :)
