Kokosinis Šokoladinis Pyragas su Gervuogių Džemu/ Chocolate Coconut Cake with Blackberry Jam

Ar žinote, kad praėjusį mėnesį buvo šokoladiniam pyragui skirta diena? Aš sugebėjau ją pražiopsoti kaip ir daugybę kitokių dienų ir progų. Tačiau mėgautis šokoladu niekada nevėlu.

Originaliame recepte šis pyragas buvo paprasčiausiai pabarstytas cukraus pudra. Tačiau as savarankiškai nusprendžiau nuodėmingą saldumyną padaryti dar labiau šokoladiniu ir papuošiau jį šokoladiniu ganašu.

Produktai:

180 gr. (2 stiklinės) kokoso drožlių
250 gr. (2 stiklinės) persijotų miltų
165 gr. (0,75 stiklinės) rudojo cukraus
200 gr. juodojo šokolado, smulkinto
100 gr. sviesto, pjaustyto gabaliukais
2 kiaušiniai, kambario temperatūros, suplakti
160 gr. gervuogių džemo

Gaminimo procesas:

Orkaitę įkaitinti iki 170C. 18x28 cm formą iškloti kepimo popieriumi. Aš naudojau 20 cm apvalią kepimo formą.

Kokoso drožles sumaišyti su miltais ir cukrumi.
Šokoladą ir sviestą sudėti į puodą ant nedidelės ugnies. Maišyti kol ištirps ir gautą masę supilti į kokoso drožles. Supilti paplaktus kiaušinius ir viską išmaišyti.

Pusę masės sudėti į kepimo formą, išlyginti paviršių, paskleisti tolygiai ant viršaus gervuogių džemą. Tada sudėti likusią tešlą, išlyginti viršų.

Kepti 50 minučių arba kol patikrinus mediniu iešmeliu jis nebebus aplipęs tešla. Palikti 10 minučių pravėsti formoje, tada išimti ir pabaigti vėsinti ant grotelių.

Juodojo šokolado ganašui: ištirpinti kartu 0.5 stiklinės grietinėlės su 180 gr. juodojo šokolado. Gautą masę gerai išmaišyti. Pilnai atvėsinti ir palikti šaldytuve kol masė sutirštės ir galima puošti pyragą.




Did you know that last month there was chocolate cake day? I managed to miss it, just like many other days and occasions. But it is never too late to enjoy chocolate.

In the original recipe these bars were just dusted with icing sugar. However, I decided to make this sinful sweet even more chocolaty and decorated it with chocolate ganache.



Makes: 16 pieces

Products:

180 gr. (2 cups) dessicated coconut
250 gr. (2 cups) sifted flour
165 gr. (0.75 cup) brown sugar
200 gr. dark chocolate, chopped
100 gr. butter, chopped
2 eggs, room temperature, lightly beaten
160 gr. blackberry jam

Method:

Preheat the oven to 170C. Line 18x28 cm baking pan with baking paper. I used 20 cm round baking pan.

Mix coconut with flour and sugar.
Place chocolate and butter in a pan on a low flame. Mix until they melt then pour the mixture into the coconut. Add the eggs and mix everything well.

Spoon half of the dough into baking pan, even the surface,then spread blackberry jam evenly on top. Add the remaining dough and even the top.

Bake for 50 minutes or until wooden skewer inserted comes out clean. Leave for 10 minutes to cool in the form, then remove and finish cooling on the wire rack.

For the dark chocolate ganache: Melt together 0.5 cup of cream together with 180 gr. chopped dark chocolate. Mix it well. Cool ganache completely and keep refrigerated until it sets and thickens and you can decorate a cake.
