Pyragas su Kokosu ir Žaliosiomis Citrinomis/ Coconut and Lime Cake

Ne pirmas ir ne paskutinis kartas tikriausiai, kai pamiršau, kad turėjau beveik pilną pakuotę kokoso drožlių ir nusipirkau dar vieną. Aš nelabai turiu tokiais atvejais kantrybės laukti kol prireiks kažkur jas naudoti, todėl susiradau receptą ir pradėjau naudoti kuo skubiau (kaip mama sako 'kad nesugestų'). Kadangi tuo pačiu buvo progra sunaudoti pusę skardinės kondensuoto pieno - dvigubas pliusas. Be to pyragas labai minštas ir skanus.. Gal reikėjo išsikepti dvigubą porciją?

Produktai:

90 gr. sviesto
2 vidutiniai kiaušiniai
125 gr. kondensuoto pieno
40 gr. kokoso drožlių
1 žaliosios citrinos sultys ir žievelė (tarkuota)
90 gr. miltų
1,5 a.š. kepimo miltelių

Glaistui:
100 gr. cukraus pudros
1 žaliosios citrinos sultys
1 v.š. džino (naudojau romą)

Gaminimo procesas:

Orkaitę įkaitinti iki 150C. 1 litro talpos formą iškloti kepimo popieriumi.

Visus produktus sudėti kartu ir išplakti elektriniu plaktuvu iki šviesios kreminės masės. Supilti į kepimo formą ir kepti apie 25 minutes (aš kepiau apie 35 minutes) arba kol patikrinus mediniu iešmeliu jis nebeapkibs tešla.

Išversti ant grotelių ir palikti pilnai atvėsti.
Glaistui skirtus produktus sumaišyti kartu. Užpilti glaistą ant atvėsusio pyrago, supjaustyti gabaliukais ir patiekti.


Not the first and probably not the last time when I forgot that I had almost a full pack of dessicated coconut and bought another one. I do not have the patience to wait until I need to use it, so I found a recipe and started using as soon as possible (as my mother says, 'it's better not to let it go bad'). Since the same recipe helped me to to use half a can of condensed milk - double plus. Besides cake very  delicious .. Maybe I should have made double portion at once?

Products:

90 gr. butter
2 medium eggs
125 gr. condensed milk
40 gr. dessicated coconut
Juice and zest (grated) of 1 lime
90 gr. flour
1.5 tsp baking powder

Glaze:
100 gr. icing sugar
Juice of 1 lime
1 tbsp gin (I used rum)

The cooking process:

Preheat the oven to 150C. Line 1 liter baking form with baking paper.

Put all the products together and beat with an electric mixer until light and creamy. Pour into baking form and bake for about 25 minutes (I baked for about 35 minutes) or until wooden skewer inserted comes out clean.

Transfer on the wire rack and leave to cool completely.
Mix all products for the icing together. Pour the glaze over the cooled caked, cut and serve.
