Grybų Risoto Kamuoliukai/ Mushroom Risotto Balls

Nors ryžiai ir risoto man labai patinka, bet būna, kad kartais lieka šiek tiek sekančiai dienai ir galiausiai jo niekas nesuvalgo. Šis receptas geras būdas skaniai sunaudoti likusį risoto arba galima gaminti šviežią risoto ir tuomet iš jo kamuoliukus.

3 stiklinės sultinio
60 gr. sviesto
150 gr. grybų, smulkiai pjaustytų
1 nedidelis svogūnas, smulkintas
1 skiltelė česnako, smulkinta
0,75 stiklinės arborio ryžių
0,5 stiklinės tarkuoto parmezano
1,5 stiklinės džiuvėsėlių
Aliejaus kepimui

Gaminimo procesas:

26x16 cm formą iškloti kepimo popieriumi. Sultinį palikti virti ant nedidelės ugnies.

Dideliame puode ant vidututinės ugnies ištirpinti sviestą. Sudėti grybus, svogūną ir česnaką. Maišant pakepti 5 minutes arba kol grybai suminkštės. Sudėti ryžius, maišant pakepti apie minutę.

Supilti stiklinę sultinio, išmaišyti ir pavirti kol skystis susigers. Supilti dar vieną stiklinę sultinio, palaukti kol susigers ir supilti likusį sultinį. Kai sultinys susigers įmaišyti parmezaną. Paskleisti masę ant kepimo popieriaus, atvėsinti ir tuomet palikti šaldytuvę pilnai atšalti.

Atšaldytą risoto supjaustyti į 12 vienodų dalių. Šlapiomis rankomis iš risoto suformuoti 12 kamuoliukų. Ant lėkštės suberti džiuvėsėlius. Risoto kamuoliukus apvolioti džiuvėsėliuose. Didelėje gilioje keptuvėje įkaitinti aliejų ir kepti kamuoliukus apie 3 minutes, vartant, kol bus auksiniai rudos spalvos iš visų pusių. Prieš patiekiant palikti ant popierinio ranksluoščio, kad susigertų riebalai.


Though I like rice and risotto, but sometimes I can't finish it and I have some leftovers the next day.   This recipe is a good way to use the leftovers or you can make fresh risotto from scratch and then use it.


Makes: 12

Products:

3 cups stock
60 gr. butter
150 gr. mushrooms, finely chopped
1 small onion, chopped
1 clove garlic, minced
0.75 cup arborio rice
0.5 cup grated parmesan
1.5 cup breadcrumbs
Oil for frying

Method:

Line 26x16 cm form with baking paper. Leave the stock to simmer on a low heat.

In a large pan on the medium heat melt butter. Add mushrooms, onion and garlic. Fry stirring for 5 minutes or until mushrooms are soft. Add the rice, fry for about a minute.

Add a cup of stock, mix and simmer until the stock is absorbed. Then add another cup of stock, wait until it's absorbed and add the remaining stock. When all the stock is absorbed mix in parmesan. Spread risotto on the baking paper and leave to cool, the leave in the refrigerator to cool completely.

Cut cold risotto into 12 equal parts. With wet hands roll 12 balls. Spread breadcrumbs on a plate. Roll risotto balls to coat in breadcrumbs. In a large deep frying pan heat the oil and fry the balls for about 3 minutes, flipping, until they are golden brown on all sides. Place on the paper towel to drain before serving.
