Jogurtinė Panna Cotta su Mėlynių Padažu/ Yogurt Panna Cotta with Blueberry Compote

Panna cotta buvo vienas iš tų mistiškai skambančių desertų, kurio niekada nebuvau bandžiusi gaminti. Desertai su želatina ne mano stiprioji pusė, bet panna cotta pavyko. Gaivaus skonio jogurtinė panna cotta su saldžiarūgščiu mėlyniu padažu tikrai vykęs desertas.

Produktai:
Panna cottai:

0,25 stiklinės vandens
1 pakelis želatinos
0,3 stiklinės cukraus
1,5 stiklinės pieno
0,5 stiklinės grietinėlės
2 stiklinės graikiško jogurto
0,5 citrinos sultys

Mėlynių padažui:

4 stiklinės mėlynių
0,25 stiklinės vandens
3 v.š. balzaminio acto
1 v.š. krakmolo

Gaminimo procesas:

Į karštą vandenį įmaišyti želatiną ir palikti 10 min išbrinkti. Nedideliame puode ant nedidelės ugnies užvirti kartu 1 stiklinę pieno. Nuimti nuo ugnies ir išmaišyti kol cukrus ištirps.

Dideliame dubenyje sumaišyti kartu likusį pieną, grietinėlę ir jogurtą. Supilti pašildytą pieną ir želatiną, gerai išmaišyti. Galiausiai įmaišyti citrinos sultis.

Supilti panna cotta į indelius. Uždengt ir palikti mažiausiai 2 val šaldytuve.

Mėlynių padažui užvirti mėlynes su vandeniu, pavirti apie 5 minutes. Nedideliame dubenyje sumaišyti balzaminį actą ir krakmolą, kol krakmolas ištirps. Supilti į mėlynių padažą ir pavirti dar apie 5 minutes arba kol padažas patirštės. Nuimti nuo ugnies ir įmaišyti likusias mėlynes. Atvėsinti prieš patiekiant su panna cotta.


Panna cotta was one of those mystical sounding desserts, which I never tried to make. Desserts using gelatin was never my strength, but I succeeded making this panna cotta. Yogurt panna cotta has nice fresh taste and goes really well with sweet and sour blueberry sauce. 


Servings: 6

Products:
For Panna cotta:

0.25 glass of water
1 packet gelatin
0.3 cup sugar
1.5 cups milk
0.5 cup cream
2 cups Greek yogurt
Juice of 0.5 lemon

For Blueberry sauce:

4 cups blueberries
0.25 glass water
3 tbsp balsamic vinegar
1 tbsp cornstarch

Method:

Mix hot water with gelatin and leave for 10 minutes until they form a gel. In a small pan on the low heat simmer 1 cup of milk and sugar. Remove from the heat and stir until sugar is dissolved.

In a large bowl, mix together the remaining milk, cream and yoghurt. Pour the warmed milk and gelatin and mix well. Finally, mix in the lemon juice.

Pour the panna cotta into serving cups. Cover and leave for at least 2 hours in the refrigerator.

For the blueberry sauce bring blueberries with water to a boil and simmer for about 5 minutes. In a small bowl mix balsamic vinegar and cornstarch until the cornstarch is dissolved. Pour vinegar mixture to the blueberry sauce, mix and simmer for about 5 minutes or until the sauce thickens. Remove from heat and mix in the remaining blueberries. Cool before serving with panna cotta.
