Obuolių Pyragas su Pinijų Riešutais/ Apple Cake with Pine Nuts

Štai ir prasidėjo ruduo, nors kol kas vis karšta ir nepanašu į rudenį. Rudens ir savaitgalio proga obuolių pyragas su pinijų riešutais. Paprastas ir skanus, o pinijų riešutai priduoda tikrai įdomaus skonio.



Produktai:

3 dideli obuoliai, nulupti, išimtom sėklom ir smulkiai pjaustyti
1 citrinos žievelė
2 v.š. citrinos sulčių
1 stiklinė (aš naudojau 0,75) + 2 v.š. cukraus
5 dideli kiaušiniai
150 gr. sviesto, tirpinto ir atvėsinto
1 a.š. vanilės ekstrakto
2,5 stiklinės miltų
1,5 a.š. kepimo miltelių
1,5 a.š. malto kardamono
0,5 a.š. druskos
0,3 stiklinės pinijų riešutų

Gaminimo procesas:

Įkaitinti orkaitę iki 180C. Kekso formą iškloti kepimo popieriumi.

Persijoti miltus, kepimo miltelius, kardamoną ir druską. Kitame dubenyje sumaišyti obuolius su citrinos žievele ir sultimis.
Elektriniu plaktuvu išplakti kiaušinius su 1 stikline cukraus (apie 2 minutes). Plakant įmaišyti sviestą ir vanilės ekstraktą.

Per kelis kartus maišant sudėti miltus kol susimaišys, bet nepermaišyti. Atsargiai įmaišyti obuolius. Supilti tešlą į kepimo formą, ant viršaus užbarstyti pinijų riešutus ir kepti apie 40-45 minutes arba kol patikrinus mediniu iešmeliu jis nebeaplips tešla.


The autumn began, thought it is still hot and does not look like autumn at all. Because it's autumn and almost weekend I am sharing this apple cake with pine nuts. Simple and delicious, and pine nuts gives really interesting and nice flavor.


Products:

3 large apples, peeled, seeded and sliced
Zest of 1 lemon
2 tbsp lemon juice
1 cup (I used 0,75)sugar
5 large eggs
150 gr. butter, melted and cooled
1 tsp vanilla extract
2.5 cups flour
1.5 tsp baking powder
1.5 tsp ground cardamom
0.5 tsp salt
0.3 cup pine nuts

Method:

Preheat the oven to 180C. Whore form lined with baking paper.

Sift the flour, baking powder, salt and cardamom. In another bowl mix apples with lemon zest and juice.
With an electric mixer beat the eggs with 1 cup of sugar (for about 2 minutes). Add butter and vanilla extract, and mix well.

Gradually add flour mixture and mix until incorporated, do not overmix. Carefully fold in the apples. Pour the batter into the baking form, sprinkle pine nuts on top and bake for about 40-45 minutes or until a wooden skewer inserted in the center comes out clean.

  5. This cake looks amazing Medeja! I love the pine nuts on top and the cardamom is a wonderful change cinnamon which seems to be used in most apple cake recipes I've seen lately!

  8. I was just thinking that I would like to make something other than pies with apples and then I saw this--thank you for sharing! I always slice freeze some apples in early winter, to have them to bake with in the spring.
