Vietnamietiškas Vištienos Karis/ Vietnamese Chicken Curry

Pagal/ Source VietnamCooking

These days because of the situation at home I am even more quiet than usually..so I will be short..

This Vietnamese Chicken Curry is one more dish that I tried in the restaurant and then decided that it's worth trying it at home.

Servings: 4

Products:

0.5 kg chicken cut into small pieces
1 small onion (finely chopped)
3 cloves garlic (minced)
2 tbsp curry paste
400 ml coconut milk
1 small broccoli (broken into florets)
0.5 small cauliflower (broken into florets)
1 carrot (cut into slices)
Oil for frying
Salt and pepper to taste

Method:

Heat oil in a pan, then add curry paste and fry for about 2 minutes until it becomes fragrant.

Add the chicken pieces and fry until chicken is done. Remove the chicken and leave aside.

Heat 1 tablespoon of oil in the same pan, add onion and garlic. Saute onion until it's soft. Add the remaining vegetables, you can use any vegetables you have. Fry until the vegetables become soft.

Add the fried chicken to the vegetables. Then add the coconut milk and mix well. Add salt and pepper to taste. Mix it and simmer on low heat for 20 more minutes.

Serve with noodles or rice.

  12. Great chicken curry. Slightly different from what my mom makes, but I’m sure it was mighty tasty. You inspired me to make the chicken curry my mom use to make when we grew up!
