Vištienos karis/ Chicken curry with whole spices

Dar vienas nesudėtingo, puikaus skonio ir aštroko vištienos kario receptas. Skanu valgyti tiek su ryžiais, tiek su indiška duona ar paplotėliais. Paprastai vietoje viso viščiuko aš naudoju apie kilogramą blauzdelių.




Porcijos: 6

1 porcijos energetine verte: 431 kcal, 21,7 gr. riebalu, 3,1 gr. cukraus

Produktai:

1 višta apie 800-1000gr. (su kaulais, pjaustyta į 8-10 dalių),
3 vidutinio dydžio svogūnai, 2 sutarkuoti ir 1 supjaustyti griežinėliais
8-10 juodieji pipirai
6 gvazdikėliai
5-6 kardamono ankštys
4 česnako skiltelės (trintos)
1 cm tarkuotos imbiero šaknies (arba 1 v.š.)
1 a.š. paprikos prieskonių
4 v.š. jogurto (nusunkto, t.y.palaikyto marlėje arba sūrmaišyje apie 20-30 min)
Tirpinto sviesto arba aliejaus kepimui
Druskos pagal skonį

Gaminimo procesas:

Sugrūsti kartu juoduosius pipirus, gvazdikėlius ir kardamoną.

Puode įkaitinti aliejų ir apkepti pjaustytą svogūną kol jis taps auksinės spalvos. Sudėti sugrūstus prieskonius ir maišant viską pakepti kol pasklis malonus aromatas.

Sudėti tarkuotą svogūną, česnaką ir imbierą, viską pakepti iki vientisos masės (apie 6-8 minutes). Sudėti papriką, gerai išmaišyti ir sudėti vištienos gabaliukus. Išmaišyti, kad vištienos gabaliukai pasidengtų prieskoniais.
Ant didelės ugnies pakepti vistienos gabaliukus apie 5 minutes, apverčiant kad apkeptų iš visų pusių. Sumažinti ugnį ir sudėti nusunktą jogurtą ir atsargiai išmaisyti.

Įpilti apie 1 stiklinę vandens ir įdėti druskos pagal skonį. Uždengti puodą ir pavirti and nedidelės ugnies apie 30 minučių. Kai pradeda atsiskirti aliejus ir padažas patirštėja reiškia, kad patiekalas jau išviręs. Paprastai pastovėjęs padažas dar patirštėja.






Another simple, tasty and bit spicy chicken curry recipe. It is good both with rice or Indian bread. Usually instead of the whole chicken I use a kilo of chicken drumsticks.

Nutritional value of 1 serving: 431 calories, 21,7 gr. fat, 3,1 gr. sugars

Products:

1 chicken about 800-1000gr. (on the bone, cut into 8-10 parts)
3 medium onions, 2 grinded and 1 sliced
8-10 whole black peppers
6 cloves
5-6 green cardamom pods
4 garlic cloves (minced)
1 inch grated ginger root (or 1 tablespoon)
1 tsp paprika powder
4 tbsp yogurt (drained in cheesecloth or just muslin cloth for 20-30 minutes)
Melted butter or oil for frying
Salt to taste

Method:

Crush together black pepper, cloves and cardamom.

Heat the oil in a pan and fry chopped onion until it turns golden brown. Add crushed spices, mix and fry till it releases nice aroma.

Add the grated onion, garlic and ginger, fry everything until mixture comes together (about 6-8 minutes). Add paprika, mix well and then add chicken pieces. Stir well to coat chicken with the spice paste.

On high heat fry the chicken pieces for about 5 minutes, turning then to get it fried evenly. Reduce heat, add drained yogurt and gently mix.

Add about 1 cup of water and salt to taste. Cover the pan and simmer on low heat for about 30 minutes. When the oil begins to separate and the sauce thickens means that the dish is ready.
The gravy continues to thicken as the curry stands
Usually later you leave the curry it thickens even more.

    Chicken curry is a tasty dish, its taste stay with you for long time, It's one of the dishes although Indian but to me falls in Soul Food category. Thanks for sharing the recipe and the nutritional value for this dish, it looks delicious :)
